  • 4 oz cream cheese softened

Instructions

  • Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.

  • In another bowl, whisk together the melted butter, 2 large eggs, and vanilla extract until well combined.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  • Pour the brownie batter into the prepared baking pan, spreading it evenly.
  • In a separate bowl, beat the cream cheese, 1/4 cup powdered sweetener, and egg yolk until smooth and creamy.
  • Dollop the cream cheese mixture over the brownie batter and swirl with a knife to create a marbled effect.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the brownies to cool completely in the pan before cutting into squares and serving.

Pro Tip
Don't overmix the brownie batter — mix until just combined for the fudgiest texture. When creating the cheesecake swirl, use a butter knife and make just 3-4 passes through the batter. Over-swirling blends the layers instead of creating a beautiful marble effect.

Serving Suggestions & Storage

How to Serve

Let cool completely before cutting — these set up as they cool and warm brownies will be too soft to slice cleanly. Serve with a cup of coffee or a glass of unsweetened almond milk.

How to Store

Store covered in the refrigerator for up to 5 days — they actually taste better cold. Freeze for up to 3 months. Thaw in the fridge overnight.
