  • 8 large eggs
  • 1/4 cup heavy cream or coconut milk optional for creamier eggs
  • 1 cup fresh spinach chopped
  • 1/2 cup bell peppers diced
  • 1/2 cup onions diced
  • 1 avocado sliced
  • 1 cup shredded cheese cheddar, mozzarella, or your favorite
  • 4 keto-friendly tortillas
  • Salt and pepper to taste
  • Optional toppings: salsa sour cream, cilantro

Instructions
 

  • In a frying pan or skillet, cook the chorizo sausage over medium heat until fully cooked, about 5-7 minutes. Remove from the pan and set aside.
  • In the same pan, add the diced onions and bell peppers. Cook until softened, about 3-4 minutes. Add the chopped spinach and cook until wilted, about 1-2 minutes. Remove the vegetables from the pan and set aside.
  • In a mixing bowl, whisk together the eggs, heavy cream (if using), salt, and pepper.
  • In the same pan, add the egg mixture and cook over medium heat, stirring frequently, until the eggs are scrambled and fully cooked, about 3-4 minutes.
  • To assemble the burritos, place a keto-friendly tortilla on a flat surface. Add a portion of scrambled eggs, cooked chorizo, and sautéed vegetables to the center of the tortilla. Top with sliced avocado and shredded cheese.
  • Fold the sides of the tortilla over the filling, then roll up the burrito from the bottom. Repeat with the remaining tortillas and fillings.
  • Serve immediately with optional toppings like salsa, sour cream, and cilantro, or store in the refrigerator for up to 3 days for easy meal prep.
