Ingredients

  • 1 1/4 cups finely ground almond flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. sea salt
  • 1/4 tsp. baking powder
  • 1/2 cup (1 stick) unsalted grass-fed butter, softened
  • 1/4 cup packed golden monkfruit “brown sugar”
  • 1/4 cup powdered erythritol 
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1 cup Lilly’s chocolate chips

Preparation & Ingredient Tips

  1. Preheat your oven to 350 degrees.
  2. In a small bowl combine the almond flour, baking soda, baking powder and salt in small bowl, set aside.
  3. Next, beat butter, golden monkfruit sweetener and vanilla extract in stand mixer bowl until creamy.
  4. Add the egg, beat the mixture on low.
  5. Gradually pour in the almond flour mixture and beat on low speed until combined.
  6. Lastly, mix in Lilly’s Dark Chocolate Chips
  7. Chill the mixture for 20-30 minutes 
  8. Using a small cookie scoop, drop the cookies onto a silicone lined baking sheet.
  9. Bake for 7-9 minutes or until golden brown and lightly set.
  10. Allow the cookies to cool completely before moving from the pan.
