Ingredients

  • 2 cups Almond Flour
  • 1/2 cup Swerve Sweetener
  • 2 tsps Baking Powder
  • 1/2 tsp freshly ground, Himalayan Sea Salt
  • 2 cage free Eggs
  • 1/4 cup Butter
  • 1 teaspoon Vanilla Extract 
  • 3/4 cup unsweetened Almond Milk
  • 1 cup fresh Blueberries

Preparation & Ingredient Tips

  1. Preheat oven to 350 degrees fahrenheit.
  2. Line the muffin tins with paper liners. 
  3. Melt the butter.
  4. In a bowl mix together the eggs, melted butter, vanilla extract, and almond milk.
  5. Slowly add the almond flour, sweetener, baking powder, and sea salt to the bowl and whisk. 
  6. Add the blueberries.
  7. Spoon better into muffin tin, filling each cup about 2/3 full.
  8. Bake for 20 – 25 minutes. A trick to know it is cooked is when you can put a toothpick inside and comes out clean. 
  9. Allow to cool before serving and enjoy!
