- 1 lb large shrimp peeled and deveined
- 2 medium zucchini spiralized into noodles
- 3 tbsp extra virgin olive oil
- 4 cloves garlic minced
- 1/2 cup low-sodium chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup white wine optional
- 1/4 tsp red pepper flakes
- Salt and pepper to taste
- 1/4 cup fresh parsley chopped
- Lemon wedges for garnish
Prepare Ingredients: Spiralize the zucchini into noodles and set aside. Mince the garlic and chop the parsley.
Cook Shrimp: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
