  • 4 (8 ounce) bone-in center-cut pork chops, about 3/4-inch thick

  • ½ teaspoon salt

  • ¾ teaspoon ground pepper, divided

  • 3 tablespoons extra-virgin olive oil, divided

  • 1 (5 ounce) package sliced fresh shiitake mushrooms

  • ¼ cup thinly sliced shallot

  • 4 cloves garlic, thinly sliced

  • ½ cup dry sherry

  • 1 (10.5 ounce) can low-sodium cream of mushroom soup

  • ¾ cup water

  • 1 teaspoon lower-sodium Worcestershire sauce

  • 1 teaspoon Dijon mustard

  • 1 tablespoon thinly sliced fresh chives

  2. Season the pork chops with salt and 1/2 teaspoon of ground pepper.
