Ingredients

  • 6 slices Bacon 
  • 1 lb Pork Tenderloin
  • 2 tbsp Rosemary, minced
  • 2 larger garlic gloves  
  • Salt & Pepper (or seasoning of choice)
  • 2 tbsp olive oil, plus more to brush the pan 

Preparation & Ingredient Tips

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix together minced rosemary, minced garlic, salt, pepper, and 2 tbsp of olive oil.
  3. Rub the pork tenderloin with the rosemary mixture, making sure to cover it well on all sides.
  4. Take the bacon slices and weave them together to form a mat. Place the pork tenderloin on top of the bacon mat, with the bacon overlapping on top of the pork.
  5. Carefully roll the bacon around the pork tenderloin, tucking the ends of the bacon underneath the tenderloin.
  6. Heat a skillet over medium-high heat and add a little bit of olive oil to the pan. Once hot, add the bacon-wrapped pork tenderloin and sear for 2-3 minutes on each side, until the bacon is crispy.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
  8. Remove the skillet from the oven and let the pork rest for 5-10 minutes before slicing and serving.
