Ingredients

For the Coconut Layer:

  • 3 cups shredded unsweetened coconut flakes
  • 1 cup melted coconut oil
  • 1/4 cup sticky sweetener of choice (e.g., pure maple syrup or honey)

For the Peanut Butter Layer:

  • 2 cups smooth peanut butter (or any nut butter of choice)
  • 1/2 cup sticky sweetener of choice (e.g., pure maple syrup or honey)
  • 1/2 cup coconut flour

For Topping:

  • Dark chocolate chips, melted

Preparation & Ingredient Tips

  1. In a mixing bowl, combine the shredded coconut flakes, melted coconut oil, and sticky sweetener. Mix well until all ingredients are evenly combined.
  2. Line a baking dish or pan with parchment paper for easy removal later. Press the coconut mixture firmly into the bottom of the dish to form the bottom layer. Place it in the freezer while you prepare the peanut butter layer.
  3. In another mixing bowl, combine the smooth peanut butter, sticky sweetener, and coconut flour. Stir until the mixture becomes thick and dough-like.
  4. Remove the baking dish from the freezer and evenly spread the peanut butter mixture over the coconut layer.
  5. Return the dish to the freezer and let it set for about 1-2 hours, or until firm.
  6. Once the bars are firm, melt the dark chocolate chips in a microwave-safe bowl or using a double boiler.
  7. Remove the dish from the freezer and drizzle or pour the melted chocolate over the top, covering the peanut butter layer completely.
  8. Place the dish back in the freezer for an additional 15-30 minutes to allow the chocolate to set.
  9. Once the chocolate has hardened, remove the bars from the dish by lifting the parchment paper. Cut into desired bar shapes or squares.
  10. Serve immediately and enjoy! If you have leftovers, store them in an airtight container in the refrigerator for up to a week.
