- 8 ounces chorizo sausage
- 8 large eggs
- 1/4 cup heavy cream or coconut milk optional for creamier eggs
- 1 cup fresh spinach chopped
- 1/2 cup bell peppers diced
- 1/2 cup onions diced
- 1 avocado sliced
- 1 cup shredded cheese cheddar, mozzarella, or your favorite
- 4 keto-friendly tortillas
- Salt and pepper to taste

Instructions
- In a frying pan or skillet, cook the chorizo sausage over medium heat until fully cooked, about 5-7 minutes. Remove from the pan and set aside.
- In the same pan, add the diced onions and bell peppers. Cook until softened, about 3-4 minutes. Add the chopped spinach and cook until wilted, about 1-2 minutes. Remove the vegetables from the pan and set aside.
