Ingredients

  • 3 Free-Range Eggs
  • 1/4 of an Onion
  • 1/4 of a Peppers
  • 3 Mission Carb Balance Flour Tortillas
  • 1/2 lb Ground Chorizo
  • 1 cup Rice
  • 1/4 cup Organic Valley Cheese
  • 1/8 cup cilantro

Preparation & Ingredient Tips

  1. Begin by cooking chopped onions and peppers.
  2. Once the vegetables have been cooked we need to pour the eggs on top, stirring occasionally. 
  3. Cook the eggs. 
  4. While the eggs are cooking bring 2 cups water to boil in a pot.
  5. Place the rice inside, cook for 10 minutes and then let simmer. 
  6. Finish cooking eggs, and cook the ground chorizo. 
  7. Once chorizo is cooked mix the eggs back in. 
  8. Begin with a layer of cheese. Add egg and chorizo mix into burrito. Add rice into the burrito. Finally top if off with some chopped cilantro.  
  9. Wrap the burrito. 
  10. Spray another pan and place burrito on pan.
  11. Cook for a few minutes on each side flipping to ensure both sides are cooked. 
  12. Serve and enjoy!
