Easy and healthy Bacon Egg Muffin recipe!

A bacon egg muffin is a delicious and satisfying breakfast dish that can be enjoyed any day of the week. This muffin is a great source of protein from the eggs and bacon, which can help keep you feeling full and energized throughout the morning. Additionally, the bacon provides a healthy dose of vitamin B12, which is important for healthy nerve function and DNA synthesis.

 

To bake a bacon egg muffin, start by preheating your oven to 375°F (190°C). In a muffin tin, line each cup with a slice of bacon, making sure to cover the bottom and sides of each cup. Crack an egg into each cup, being careful not to break the yolk. Add salt and pepper to taste, and sprinkle some grated cheese on top.

Bake the muffins in the oven for about 15-20 minutes, or until the egg whites are set and the yolks are cooked to your desired consistency. Remove the muffins from the oven and let them cool for a few minutes before using a knife to loosen them from the tin.

 

These muffins can be enjoyed on their own or on the go in a Tupperware container for a balanced and nutritious breakfast.

  • 5 slices Bacon
  • 6 Free-Range Eggs
  • 1 tsp of Salt 
  • 1 tsp of Pepper
  • 1 cup of spinach?
  • 2 tbsp of Extra Virgin Olive Oil
  • 2 tbsp Almond Milk

Preparation & Ingredient Tips

  1. First begin by placing the bacon on a pan and cooking, ensure not to make them too crispy as they will cook a little more in the oven.
  2. Next crack the eggs and place in bowl with, salt, pepper, and milk. Mix
  3. Add the bacon and mix again.
  4. Pre-heat the oven to 375 degrees
  5. Using a muffin pan cover with extra virgin olive oil. This will ensure you can easily pull the muffins out when done. 
  6. Place mix in each cup until full. 
  7. Bake for 15-20 minutes or until the eggs look cooked. 
  8. Once cooked let sit for 5 minutes to cool off and then enjoy!
